L’Atelier de Joel Robuchon

L’Atelier de Joel Robuchon is an incredible dining experience. Robuchon stimulates the five senses of sight, taste, sound, touch, and smell and takes you on a sensory journey. Each course tells a story that you will remember far after you enjoy consuming it. L’Atelier truly produces art for consumption, which unfortunately means, the art is gone after you have eaten it. Under disguise in a brown wig and changed name, I took photos of each course of the tasting menu because I wanted to hold on to my journey and share it with others.

1. L’ASPERGE BLANCHE: façon Panna cotta et sa pomme d’amour de Corrèze (white asparagus panna cotta with a candy apple)

1. LE CRABE ROYALE: émietté sous un crémeux d’avocat, eau de tomate infusée au curry et à l’estragon (The Royal Crab, crumbled under an avocado cream with tomato water infused with curry and tarragon) 

1. L’ŒUF: cocotte en «carbonara» onctueuse (The Egg, “carbonara” creamy casserole) 

1. LE GASPACHO: à la « Catalane »,sous un sorbet moutarde à l’ancienne (Catalan Gazpacho under an old fashioned mustard sorbet)

1. LE GYOZA: à la plancha, volaille, poireau et gingembre, dans son bouillon au parfum d’Asie (dumplings with chicken, leeks, and ginger)

1. LE FOIE GRAS: de canard chaud, cœur de pomme verte roulé dans un jus acidulé à l’hibiscus (foie gras)

1. LA MORUE: fraîche en imprimé d’herbes aux sucs de légumes et basilic (cod with fresh herbs)

1. L’ONGLET: en tartare et ses frites à l’ancienne (hanger steak with old fashioned potato chips)

Une pomme purée truffée (Mashed Potatoes) 

10.  LA MERINGUE: à la française, sorbet pamplemousse sous une émulsion à la fleur de coquelicot (French meringue with grapefruit sorbet)

11. LE CHOCOLAT TENTATION: ganache onctueuse au chocolat Araguani, glace au grué de cacao, biscuit Oréo (creamy chocolate ganache, cocoa grilled ice cream, oreo cookie)
